Homemade Granola with strawberry & cinnamon jam

About the Recipe

Granola, the king of the breakfast cereal, especially if you enjoy a good crunch to start the day. Packed with oats, walnuts, seeds and coconut, topped with creamy natural yoghurt, a dollop of our strawberry jam and sprinkled with cacao nibs its sure to set you up well into lunch time.
This mix is super easy to make and fairly cost effective, you'll never buy granola again!

Ingredients

Granola


  • 175g Rolled oats

  • 35g flake/shredded coconut

  • 30g sunflower seeds

  • 30g pepitas

  • 70g walnuts roughly chopped

  • 30g canola oil ( we use Block 275 canola oil as it adds extra nuttyness)

  • 65g wild flower honey

  • 1tsp Ground cinnamon

  • 1/2tsp Ground ginger

  • pinch of salt


To Serve


  • Natural yoghurt

  • Strawberry & cinnamon jam

  • Raw cacao nibs

  • Fresh strawberries or berries of choice

  • Milk of your choice

Preparation

  1. Heat oven to 160*c

  2. Add all dry ingredients to a bowl and mix till combined.

  3. Put canola oil and honey in a sauce pan a heat until completely liquid and pourable.

  4. Pour heated honey and oil over dry ingredients and mix until well combined this will get quite sticky!

  5. Tip into a lined baking tray and spread out in an even layer

  6. Place in the oven and set a timer for 15 mins

  7. When timer goes offtake tray out and mix the granola with a spatula making sure all the slightly browned bits are mixed into the mix again.

  8. Return to the oven for another 10mins and repeat previous step.

  9. Repeat the process of stirring and rebaking until all the mix is slightlly golden ( the mix will keep cooking once out of the oven)

  10. Place on a cooling rack and give a mix to break it up then leave to cool completely

  11. Once cool, transfer to an air tight container.


To Serve


  1. Add a cup of granola to your bowl

  2. Top with Yoghurt followed by a tsp of strawberry jam

  3. Add berries and sprinkle with cacao nibs

  4. (Optional) pour milk over if you prefer a cereal like breakfast
