About the Recipe
This Beetroot dip, is super easy to make and you'll have it on the table within 5 - 10 minutes. It can also be made in advance allowing the flavours to build and meld together.
Beetroot, dill and horseradish are a match made in heaven, add the creamy notes of cream cheese and cottage cheese and by golly you're onto a winner.
Not only is this dip, dill-iscious 🙈 Its pretty versatile too, add it to a bagel with smoked salmon and capers or on the base of a serving platter with flaked roast salmon and thinly shaved fennel for quite the show stopper!
Ingredients
125g Cream cheese ( at room temp)
100g Cottage cheese
50g Mayonnaise
1 small clove garlic grated
2 tsp Horseradish cream
5g dill with from kept to one side to garnish (one pack from the supermarket)
2 tbsp Beetroot relish
Salt and pepper to taste
Preparation
In a bowl, mix the cream cheese with mayonnaise until smooth
Mix through cottage cheese, horseradish and garlic.
Add dill and beetroot relish and gently fold till fully mixed
Adjust seasoning to taste
Serve and garnish with fresh dill sprigs
