The sweet flavours of stone fruit really shine in this jam, with fresh lime juice bringing a burst of freshness and zing.  Sitting somewhere in between a jam and a marmalade, the addition of lime peel gives an ever so slight bitterness that rounds this preserve out adding complexity and depth. 
Perfect on crumpets slathered with butter, dolloped on yohurt with granola or used as a glaze for your favourite glaze.
